La Querceta was born in 1980 from generations of farming families and transitioned entirely to organic agriculture in 1997. Across 170 hectares in the Apulian Murgia, Masserie Amiche oversees every step—from growing animal feed to the artisanal production of cheeses, meats, and charcuterie—without preservatives, pesticides, or additives, in full respect of the soil, animals, and tradition.

Their 500 dairy cows and 600 free-range pigs graze on wild herbs, grains, and whey from their own milk, yielding meat with a full, pure flavor. With the same care, they craft mozzarella, burrata, stracciatella, ricotta, scamorza, caciocavallo, provolone, and cacioricotta, aged for up to 18 months using the traditional siero innesto method.
